What is the difference between using fresh versus dried herbs? In this post, we will discuss the differences in measurement, volatile oil content and the longevity of preparations.

The topic of fresh over dried herbs has long been debated among herbalists, but why? In this post, we will discuss the change in moisture content and how it relates to measurement, volatile oil content, formulation and preparation. Often the first argument when it comes to using dried herbs is the change in volatile oil content during the drying process. Luckily this is a misconception! Herbs do not lose a tangible amount of active constituents or volatile oil when dried, in fact dried herbs have plenty of pros. Dried herbs are often more readily available and if stored properly can last for years. It should be noted that change in water content requires a a ratio difference of 1:3, meaning that 1 part dry herb is typically equal to 3 part fresh.

Fresh herbs are undeniably brighter and more aromatic than dried herbs, making them suitable for teas and infusions, meals like salads or soups and even herbal steams. For many beginners, applying fresh herbs can be intimidating, using fresh herbs in non-shelf stable preparations is an easy way of testing the waters. Dried

Dried herbs on the other hand are best used in things like tinctures or infused oils. This is because dried herbs have none or very low water content making it perfect for more self stable preparations. Using dried herbs not only has the upside of extending shelf stable preparations, but also adds convenience when it comes to availability and sourcing your herbs. When purchasing herbs, it is important to buy from a reputable source. I've added below a few of my go-to herbal suppliers.
